another zucchini recipe

I still am getting a lot of zucchini, and found another recipe that I quite enjoyed.


Zucchini Brownies

Ingredients: 2 cups grated zucchini, 1 1/2 cups sugar, 3/4 cup oil, 2tsp vanilla, 2 cups flour, 1/3 cup cocoa, 1 1/2 tsp baking soda, 1 tsp. salt, 1/2 cup nuts (optional).

Directions: Combine zucchini, sugar, oil, and vanilla. Mix dry ingredients and add to zucchini mixture. Pour into greased 9x13 baking pan. Bake at 350 degrees fro 35 to 40 minutes. Cool.

Frosting: 1/4 cup butter, 1 cup sugar, 1/4 cup milk, 1/2cup chocolate chips, 1/2 cup miniature marshmallows, 1 tsp. vanilla, 1/2 cup chopped nuts (optional)

Directions for frosting: In a saucepan, melt butter on medium heat. Add sugar and milk. Bring to a boil, stirring frequently. Cook an stir about 1 minute. Remove from heat. Add chocolate chips and marshmallows. Stir until melted. Add vanilla. Spread over brownies. Sprinkle with nuts (if you like that sort of thing)

zucchini cream cheese bars

So, I have zucchini coming out of my ears. I got a book called Zucchini Houdini from the Logan Library and have tried a couple of recipes. My favorite one so far is zucchini cream cheese bars. I thought I'd share the recipe.


Zucchini Cream Cheese Bars

Ingredients:

3 eggs

2 cups sugar

1 cup oil

2 cups grated zucchini

3 tsp. vanilla

2 1/2 cups flour

1/4 tsp salt

2 tsp baking soda


Beat together eggs, sugar, and oil. Add zucchini and vanilla. Mix together dry ingredients and then combine with zucchini mixture. Mix until combined well. Pour into a greased and floured 9x13 baking dish. Bake at 350 degrees for 25 minutes (unless it's my oven, then it seemed like a lot more than 25 minutes!) or until toothpick comes out clean. Cool.


Frosting:

1/2 cup butter, softened

3 oz. cream cheese

1 tsp. vanilla

2 1/2 cups powdered sugar

milk as needed


Combine butter and cream cheese and beat until light. Add vanilla and powdered sugar. Beat until fluffy, adding a slight amount of milk for consistency. Frost the bars when they are completely cool.

Williams baby

Some of you may not have heard that Jenny and Crae Williams had their baby girl on Tuesday, August 2. Little Eva was 6 lbs. and 12 oz. and so darling. Congratulations Williams family!
